Beef Pho
Beef Phở is considered the “national soul and essence” of Vietnam, and making a bowl of Phở is a meticulous process. Today, Chef Dat Huynh will introduce a simple, quick, and extremely delicious recipe for making beef Phở at home. With its distinctive aroma, light yet flavorful broth, and tender, chewy noodles, this recipe will help you create an authentic bowl of Phở right at home.
Step 1: Preparation
Clean the bones and meat.
Step 2: Cooking
* Making the Beef Phở Broth
Add the ingredients into a pot, including 1.1lb of beef marrow bones and 1.1lb of brisket with 2.2 liters of water.
Simmer the broth for about 1 hour and 40 minutes to extract the flavors. Then, remove the ingredients and strain the broth.
*Grilling the Ginger and Onion:
Take 1 ginger root and 1 shallot, crush them, and grill them on a rack for about 3 minutes until fragrant.
*Toasting the Five-Spice Blend:
Toast 20g of five-spice (3 star anise, coriander seeds, 1 cinnamon stick, cardamom) for about 1 minute until fragrant.
*Infusing Aromatics & Seasoning the Beef Phở Broth:
Place the toasted five-spice blend, grilled shallot, and ginger into a spice pouch, and add 10g of cilantro roots to the broth. Let it simmer for about 15 minutes.
After 15 minutes, remove the spice pouch and season the broth with a mix of 16g salt, 16g seasoning powder, 15g rock sugar, 10g granulated sugar, and 1g pepper.
*Slicing the Meat:
Thinly slice 0.4lb of rare beef. Also, thinly slice the brisket to a bite-sized portion.
*Chopping Vegetables:
Slice lime and chili. Thinly slice the onion.
Finely chop scallions and cilantro.
Step 3: Enjoy the Authentic Beef Phở
Blanch the phở noodles briefly and place them in a bowl.
Add slices of brisket and rare beef on top, then pour the broth over them.
Garnish with scallions, cilantro, onions, and sprinkle some pepper on top. You can also decorate with chili slices.
Serve with bean sprouts, sawtooth herb, and basil. Optionally, dip the meat in hoisin sauce and chili sauce.
